Simply Nutty Soba Noodle Salad

What you need

2 large chicken breasts (approximately 400g)

270g packet soba noodles

½ cup Simply Nuts peanut butter smooth

2 tbsp rice vinegar

4 tsp pure maple syrup or honey

1 tsp soy sauce

1 garlic clove, crushed

3 small Lebanese cucumbers, thinly sliced

1 small red capsicum, thinly sliced

1 small yellow capsicum, thinly sliced

2 spring onion, finely chopped

½ cup roasted peanuts, roughly chopped

Sesame oil and coriander, to serve

Additional notes

You can use tofu instead of chicken for a simply nutty vegetarian option!

Instructions

Step 1.

Pre-heat grill to medium-high heat. Add chicken to grill, season with salt and pepper and cook until juices run clear (approximately 6-7 minutes each side). Set aside until cool enough to handle and slice into strips. 

Step 2.

Cook noodles in a large pot of boiling water according to packet instructions. Drain and rinse under cold running water; set aside.

Step 3.

Whisk peanut butter, vinegar, maple syrup/honey, soy sauce, garlic, and ¼ cup warm water in a large bowl until smooth. The dressing should be the consistency of heavy cream; if too thick, add a little more water as needed. Season with salt and pepper. If noodles are sticking together, rinse briefly to separate; drain well. Transfer to bowl with dressing; toss to coat. Add cucumbers, peppers, spring onions and season well with salt and pepper.

Step 4.

Divide noodles among bowls; top with sliced chicken, peanuts, coriander and drizzle with sesame oil.
