Simply Nutty Rocky Road Slice

What you need

Slice: 

250g plain sweet biscuits (ie. Marie, Arrowroot, Nice) roughly crushed

100g Glace cherries, cut in half

1/2 cup desiccated coconut

1 tin of condensed milk

3 tbsp Simply Nuts Crunchy peanut butter

50g butter

3 tbsp cocoa

Mini Marshmallows

 

Icing:

1 cup icing sugar

1 tbsp cocoa

A dash of water

Instructions

Step 1.

Line a 20cm x 20cm square tin with grease proof paper.

Step 2.

In a large bowl, combine crushed biscuits, cherries and coconut.

Step 3.

In a small pan over low heat, combine condensed milk, peanut butter, butter and cocoa.

Step 4.

Pour the condensed milk mix over the dry ingredients and stir well.

Step 5.

Press the mix into the prepared tin.

Step 6.

To make the icing, combine the icing sugar and cocoa with enough water to make a thick paste. Mix until smooth.

Step 7.

Spread the icing over the biscuit base and sprinkle with marshmallows.

Step 8.

Refrigerate for 2 hours, or until set. Cut into 16 slices and store in an airtight container in the fridge.
