No-bake Simply Nutty Granola Bars

Another Simply Nutty recipe we’re just nuts about… our No-bake Granola Bars!

Need to know

Makes: 16 bars

Preparation time: 15-20 minutes plus 2 hours or overnight refrigeration

What you need

½ cup brown rice syrup

½ cup Simply Nuts No Added Salt peanut butter

3 tbsp coconut oil

2 tsp vanilla extract

2 cups rolled oats

¼ tsp salt

2 tbsp chia seeds

100g cranberries

50g almonds, roughly chopped

30g sunflower seeds

30g pepitas

Instructions

Step 1.

Line a medium 20 x 20cm baking tray with baking paper and spray with olive oil.

Step 2.

Combine brown rice syrup, peanut butter and coconut oil in a small saucepan over a medium-low heat and warm gently until melted and smooth, stirring frequently. Remove from the heat and stir through the vanilla extract. Set aside to cool for 5-10 minutes.

Step 3.

In a large mixing bowl, combine oats, salt, chia seeds, cranberries, almonds, sunflower and pepita seeds. Add the peanut butter mixture and stir until mixed through. Place into prepared tin and press into an even layer.

Step 4.

Refrigerate for at least 2 hours or overnight if possible and cut into 16 squares. Store in an airtight container in the refrigerator for up to 3 weeks.
