Vegetable matchsticks with satay sauce
Want to up your snack game? Here’s one for the repertoire – Vegetable matchsticks with Satay Sauce.
To make satay sauce, heat the oil in a wok and fry the garlic, onion and chilli over a moderate heat until onion is soft.
Add the sugar and stir until slightly caramelised. Add the soy sauce, Simply Nuts Peanut Butter and a pinch of salt and stir through.
Add a little coconut milk at a time until you achieve your desired consistency.
Place 2 tablespoons of the satay sauce in 2 Simply Nuts glass jars. Store remaining Satay Sauce in the refrigerator.
Divide baby vegetables between the two jars.
