Peanut Butter Banana Bread

Have some overripe bananas in the fruit bowl? Put them to good use in a loaf of Simply Nuts Peanut Butter Banana Bread!

Cooking time: 1 hour and 10 minutes

What you need

5 ripe bananas (600g), mashed

100ml vegetable oil

3 eggs, whisked

250g brown sugar

120g Bega Simply Nuts Peanut Butter

1 tsp vanilla extract

300g self-raising flour

1 tsp ground cinnamon

½ cup walnuts, chopped

Extra Bega Simply Nuts, to serve

Instructions

Step 1.

Preheat oven to 165°C then line and lightly grease a 24cm x 13cm loaf pan.

Step 2.

Combine banana, oil, eggs, sugar, Bega Simple Nuts Peanut Butter and vanilla extract in a large bowl and whisk to combine.

Step 3.

Add the flour, cinnamon and walnuts and fold gently to combine. Pour batter into prepared loaf pan and bake for 1 hour or until cooked through when tested with a skewer.

Step 4.

Allow to cool in the tin for 10 minutes before turning out onto a wire rack. Once cool, slice and serve with extra Bega Simple Nuts Peanut Butter.
