Peanut Butter Choc Chip Cookies

Makes: 24 cookies

Cooking time: 15 minutes

Resting time: 30 minutes

What you need

125g butter, room temperature

3/4 cup brown sugar

½ cup white sugar

2 eggs

2 tablespoons milk

2 ½ cup plain flour

1 tsp bicarb soda

1 tsp baking powder

150g dark chocolate, roughly chopped

50g Simply Nuts Peanut butter Crunchy

Additional notes

Cookie dough balls can be frozen in a zip lock bag for a month. Just place on a tray and cook from frozen, you may need to add another 2 minutes to the cooking time.

Eat it as is or bake it into cookies – the choice is yours!

Instructions

Step 1.

Using an electric mixer combine the butter and sugar. Beat until light and fluffy, about 5 minutes.

Step 2.

Add the eggs and milk, and beat until combined.

Step 3.

Stir through the flour, bicarb and baking powder and choc chips.

Step 4.

Place 1 tablespoon of cookie dough onto a lined baking tray, leaving room to spread. Using the back of a wooden spoon place a dent on the top of each biscuit. Place in the fridge to rest for 30 minutes.

Step 5.

Heat the oven to 180°C.

Step 6.

Spoon 1/4 teaspoon of peanut butter onto each biscuit. Bake for 12-14 minutes or until golden. Remove from the oven and let rest for 3 minutes before placing on a wire rack to cool.
