Satay Tofu Nourish Bowl
It’s official, we’re nuts for Laura Fords’ simply nutty satay tofu Nourish Bowl! Our Simply Nuts Smooth Peanut Butter makes for the most deliciously creamy satay dressing – we’re certain this will become a regular in your lunch rotation!
Prepare the satay sauce by placing a small saucepan on medium heat. When hot, add the peanut oil, then add the onion, garlic and chilli. Cook until onion is soft. Add sugar and 2 tbsp sodium reduced soy sauce. Bring to the boil then add Simply Nuts Smooth Peanut Butter and coconut milk. Stir well and allow to thicken slightly. Turn off the heat and add lime juice. Adjust seasonings to taste.
Prepare the tofu by combining tofu cubes with 2 tbsp sodium reduced soy sauce, garlic and sesame oil. Allow to marinate for 10 minutes then place into an air fryer at 200C for 10-15 minutes until crispy.
Prepare the nourish bowls by dividing ingredients into 4 separate bowls, ensuring each ingredient is placed neatly within its own section in the bowl and isn’t mixed in with other ingredients.
Drizzle with satay sauce, serve immediately and enjoy.
