Simply Nutty Pumpkin Soup

Need to know

Serves: 4 (makes 1.5 litres)
Prep time: 20 minutes
Cook time: 20 minutes

What you need

1 onion roughly chopped
2 cloves garlic
1 tbsp fresh ginger
1.2 kilo Butternut pumpkin, peel and cut into 2cm dice
3 cups salt reduced vegetable stock (or chicken stock)
1 cup water
3 tbsp Bega Simply Nuts Squeeze Peanut Butter
1 tsp cumin
1 tsp cayenne pepper

Garnish (optional)
1 tbsp Bega Simply Nuts Squeeze Peanut Butter
4 tbsp natural yoghurt
2 tbsp pepitas
Fresh thyme leaves

Instructions

Step 1.

Place all the ingredients into a large pot and bring to the boil. Reduce the heat and simmer for 20 minutes until pumpkin is very soft.

Step 2.

Remove the pan from the heat and using a stick blender, puree until smooth. If you don’t have a stick blender cool the soup liquid for 1 hour before blending.

Step 3.

Divide the soup between 4 bowls and garnish with a tablespoon of yoghurt, drizzle of peanut butter, sprinkle of pepitas and fresh thyme leaves.
